Roast Korean Honey Citron Chicken 烤韩式蜂蜜柚子鸡


A sweet and mildly spicy grilled chicken thighs with a faint Korean honey citron tea flavour. The sweet and sticky skin is the gem of this chicken thigh dish 🍗. If the chicken skin is a forbidden food to you, you are missing something good here🤗

Ingredients

4 pcs chicken thighs, about 500~550g

Marinade
1 tsp chopped ginger
1/2 tsp chopped garlic
2 tsp chopped onion
2 tsp low-salt light soya sauce
2 tsp rice wine
1/4 tsp fine salt
1 tbsp raw sugar
1 tsp dark brown sugar
1/4 tsp pepper powder
2 tsp Korean red pepper paste
1 1/2 tbsp Korean honey citron tea
1 tsp sesame oil

Glazing sauce
The leftover marinade
Juice from 1 small lime, optional


Directions

1. Cut honey citron tea using a pair of kitchen scissors. Set aside.


2. Rinse and pat dry chicken thighs.


3. Pour all the marinade over the chicken thighs. Mix by hands to coat well.



4. Cover with cling wrap and let them marinate for 1/2 to 3 hours, or overnight in the fridge.


5. Arrange the marinated thighs in a single layer, over a grilling plate, or a lined baking tray.

6. Grill in an oven toaster at 170°C for about 15 minutes.

7. Remove from the toaster and baste with the remaining marinade and grill for 5 minutes. Repeat this steps for about 4~5 rounds.
If you prefer a little tangy taste, add a little lime/lemon juice to the marinade before basting.


8. After the final round of grilling, let the thighs stay in the toaster for another 20 to 30 minutes to let the remnant heat of the toaster slow-cook the the thighs to tender.

9. Garnish with cut spring onion before serving. Enjoy 😋

    1. Haha, I saw someone did a similar dish in one of the cooking competition programs over TV. So, I just imitated the dish based on my own concoction 😆
