Blueberry Yoghurt Bread Loaf (Breadmaker)


This is another yoghurt bread loaf baked using a breadmaker. Owing to another brand and quantity of yoghurt I bought, there are some adjustments to my earlier breadmaker mango yoghurt bread recipe

Yield: one 12Lx10Wx15Hcm loaf, about 490g
Using Breadmaker : Whirlpool BM1000

Ingredients
65g whole milk 
20g condensed milk
140g blueberry non-fat yoghurt

20g beaten egg 

30g raw sugar
1/4 tsp salt 

20g unsalted butter

225g bread flour 

25g wholemeal flour 
1/2 tsp instant dry yeast 

Some beaten egg as egg wash

Direction
1. Pour fresh milk, condensed milk and blueberry yoghurt into a heat resistant bowl.

2. Keep warm the yoghurt-milk mixture in a rice cooker for 10 minutes.

3. Pour the yoghurt-milk mixture into the bread pan.

4. Pour the 20g (about 1/3 of an egg) beaten egg into the bread pan.

5. Add in the raw sugar and salt.

6. Add in 20g unsalted butter.

 7. Pour in the bread flour.

8. Add in the wholemeal flour.

9. Dig a hole with your finger, and pour in the instant dry yeast.


10. Place the bread pan into the machine, close the lid and turn on the power.

11. Select option "5" Sweet bread, choose your preferred crust colour, and press "start".

This step 12 is optional, you may leave the dough in the bread pan till baking cycle completes. By shaping the dough, you'll get a more uniform loaf and minimize the appearance of conspicuous  air sacs within the loaf.

12. When the countdown timer appears at 1:55 (1 hour after started the "Sweet Dough" program), take out the dough and shape it into a ball. 
Sprinkle some bread flour over the surface of the dough.
Remove the kneading blade, and place the dough back to the bread pan
As the dough maybe sticky, it is advisable to handle it with a pair of disposable gloves.



13. When the loaf rises too close to the window, to avoid having an untanned top, cover the window with a small piece of aluminum foil.

14. Transfer the loaf to a cooling rack immediately after the baking cycle ends.

    I attempted this recipe yesterday but I substituted Blueberry Yogurt with Strawberry Yogurt. Texture came out nice but a chewy crust.

    My bread loaf did not have an even color like yours. It had two colors - light brown and dark brown. Probably the brown sugar wasn't kneaded evenly? But all in all, still good. =D

    Do you know how much ingredients should I increase to make a 750g loaf?

    1. Sorry for my late reply. You can multiply the ingredients by 1.5 to obtain a 750g loaf :)

    Can we replace condense milk and use fresh milk instead? Will it affect the bread taste?

    1. Hi Roselene, egg helps the bread to rise in height. You may substitute it by milk if you don't want egg 😊

      1. After adding all ingredients into the bread machine, can I used the delay mode? Meaning instead of 2:55 timer, I set it at say 3:55 or 4:55 to delay the start ?

      2. For step 12, the dough has turned out too sticky to roll into a ball like your which look so smooth. May I know why ?

    3. Hi Roselene, Yes, you can delay the onset of the bread making program. But not advisable for more than 3 hours of delay due to the presence of egg.
      Yes, the dough is slightly stickier, wearing the disposable gloves help. Or you may want to reduce the liquid quantity by 10g to overcome this problem :)
