Simple Sweet & Sour Prawns

I will be cooking this appetizing prawn dish for this coming Lunar New Year meal because of its simple steps to prepare, and its auspicious colour - red πŸ’“ 

In addition, the ingredients like frozen deshelled prawns, and simple condiments can be easily found in kitchen when fresh ingredients are usually difficult to procure during that period πŸ˜‰


Serving: 2 to 3 persons

Ingredients
257g frozen deshelled prawns*
70g onion, julienned
5g garlic, chopped

Sauce
20g raw sugar
35g Dancing Chef Suki sauce
10g nasi lemak sweet sambal chilli
5g crispy prawn chilli
5g SSam Jang, Korean spicy bean paste/辣豆瓣酱
Juice from 2 green limes

Garnishing
5g garlic, chopped
2g coriander stems, chopped

* the 257g of frozen prawns left only 150g by weight after thawing. 100g were literally water πŸ˜“



Directions
1. Let the frozen deshelled prawns thawed before rinsing.

Add about 1/4 tsp low-sodium salt and 1/2 tsp raw sugar to the rinsed prawns. Let the prawns marinate for about 15 minutes.

2. While waiting for the prawns to marinate, mix all the ingredients, except the lime juice, under the Sauce, together in the a small bowl. Set aside.



3. Cut onion into julienne, and chop garlic into fine bits. Prepare the garnishing garlic and coriander stem into fine bits. Set aside. 
 
4. Get everything ready, time to start cooking 🍳

5. Heat about 1 tablespoon of vegetable oil in a pot at medium heat. Stir fry julienned onion till softened and slightly brown. I cover the pot with a lid while the onion was cooking.
When the onion has softened, add in the chopped garlic and stir-fry till fragrant.

6. Before adding the marinated prawns to the pot, coat the prawns with about 1/4 tsp of potato starch.
Stir fry the prawns till they become pink.

7. Before adding the sauce from Step 2 to the pot, squeeze some lime juice from one green lime to the sauce.

Pour the sauce into the pot, and stir to coat all the prawns with the sauce.

8. When the sauce has thickened, add juice from one green lime to the content before transferring to a bowl.

9. Sprinkle the garnishing chopped garlic and coriander stem over the dish. Serve with warm rice πŸ˜‹

Tomato Sauce Omelette Prawn θ›‹η‚’θŒ„ζ±θ™Ύ


I love the crunchy prawn in this sweet and sour sauce poured over a golden omellete. An appetizing dish to go with warm rice on a hot day. This dish never fail to entice all the diners' attention at any occasion :)

Servings : 3 to 4 persons

Ingredients
150~180g frozen prawns 冰冻虾

1 egg ιΈ‘θ›‹
1 tsp fresh milk 鲜ε₯Ά
1/4 tsp seasoning powder 调味粉

1/2 yellow onion, julienned 黄葱倴丝
1/2 tsp chopped garlic θ’œθ“‰
1 tomato η•ͺθŒ„

Marinade θ…Œζ–™
1/2 tsp sugar η³–
1/8 tsp salt 盐

Gravy ι…±ζ–™
1/4 tsp light soya sauce ι…±ζΈ…
1 tbsp tomato paste η•ͺθŒ„ι…±
1 tbsp sweet chilli sauce η”œθΎ£ζ€’ι…±
1 tsp rice wine θŠ±ι›•ι…’
2 tbsp raw sugar ι»„η ‚η³–
1 tbsp lemon juice 柠ζͺ¬ζ±
30~40g water ζ°΄


1/4 tsp potato starch ε€ͺ白粉
1 tbsp water ζ°΄

Garnishing η‚ΉηΌ€
Some cilantro/Chinese coriander 芫荽


Directions
1. Thaw the frozen prawns and drain away the liquid collected.


2. Marinade the prawns with sugar and salt for about 15 minutes.


3. Peel the tomato and cut into large chunks. Set aside.



4. Blend beaten egg with fresh milk and seasoning powder (I used Knorr brand "Hao Chi")

Pan-fry the omellete in 1/2 tbsp of olive oil in medium high heat, till golden.

Transfer the omelette to a deep plate, and set aside.


5. Add another tsp of olive oil to the hot pot. When the oil is hot, give the prawns a brisk stir.

Transfer the prawns to a plate when they turned slightly opaque, and curl in to a shape of "C".
If the prawns turned into an "O", they are over-cooked.


6. Stir-fry chopped garlic till frangrant and golden. Add in the julienned onion, continue to stir-fry till frangrant.


7. Stir in the cut tomato. 

Cover and cook till the tomato softened.


8. Add in the gravy ingredients and brings to light boil.



Slowly, pour in the potato starch water to thicken the tomato sauce.


9. Finally, returned the partially cooked prawns to the gravy. Close the lid and simmer for about 1 to 2 minutes to cooked the prawns through.


10. Pour the sauce over the omelette and enjoy the delicious dish :)
