Mochi with added pumpkin purée coated with sugar peanut powder. A nice light snack in auspicious gold for the lunar new year :)
Yield: 4 snack size portions
Dough ingredients
100g glutinuos rice flour
1 tsp tapioca flour
10g fine sugar
60g cooked pumpkin purée
125g water
Peanut powder coating
1 cup finely ground peanut powder
1 tsp toasted white sesame seeds
1/2 cup fine sugar
*1 cup = 200ml

Direction
1. Mix all the dough ingredients in a bowl into a smooth batter.
2. Cover with a lid and let the batter rest for 30 minutes.
4. Heat up about 1 tbsp of oil in a non-stick pan at medium low heat.
5. When the oil is hot, pour in the batter and heat up till the batter solidify.
Do not stir the batter while heating.
6. Fold in the dough, and press to form into a big lump.
7. When the dough has turned translucent, it is ready.
8. Cut a portion of the dough and put into the peanut powder mixture.
Cut the dough into bite size and roll to coats with peanut powder.
You may want to coat the scissor blades with oil to prevent the sticky mochi from sticking to them.
9. Serve and enjoy :)
