Sweet & Tangy Sambal Chilli (Quick Preparation)



Store bought nasi lemak sambal chilli paste is a little "plain" to me. I prefer a sweeter and a little tangy version.  With the addition of palm sugar and lime juice, I upgraded the plain chilli paste to version I liked. And it can be done very quicky :)

Ingredients

1 tbsp white scallion/onion, julienned
Pinch of salt
1 tbsp nasi lemak sambal chilli paste
1 tbsp granulated palm sugar
1 tsp raw sugar, optional
1~2 tsp lime juice

The quantity of the ingredients are subject to individual's preference.

Directions

1. Heat about 1~2 tsp of olive oil and a pinch of salt in a small pan. Add in the white scallions and stir-fry till fragrant and softened.

2. Add nasi lemak sambal chilli paste, and palm sugar. Stir over low heat till the sugar melts.

3. Add in lime juice. If you prefer a sweeter version, top up with some raw sugar.

4. The sweet and tangy sambal chilli paste is ready when it becomes sticky.


Serve with spicy crispy cracker coated mid-joint wings.



Variations

1. Add onion and pineapple chunks.


and serve with rice cooker steamed hard-boiled egg, and coconut rice for a yummy meatless meal :)



2. Added with cooked prawns.
I pan-fried the prawns before adding to the sambal chilli paste.
