Crispy Cracker Coated Mid-Joint Wing


My oven cannot achieve crispy coatings for my baked chicken wings as my oven does not have a fan. When I saw my FB friend, Tay Ai Whey's, post on oven-baked wings with crispy crust, I immediately listed it as my top-priority item in my to-do list 😬

Two days later, I was able to savour this juicy oven-baked wings with crispy coatings using Whey Whey's recipe. The wings were double-coated with a layer of flour followed by a layer of beaten egg to perfectly seal in all the juice. This also helped to keep the outer cracker layer dry and crispy. The original recipe suggested using Doritos tortilla, but I replaced it by Calbee prawn crackers 😁 

This is a versatile recipe as you can change the seasoning of the marinade as well as the flavour of the cracker flavour πŸ˜‹

Besides the great taste, the steps were simple too 🌼

Ingredients

300g chicken mid-wings, about 9 medium wings
1 packet Calbee prawn crackers, black pepper flavour, 70g
50g all purpose flour
5g rice flour, optional
1 egg, beaten


Marinade
1/2 tsp salt
1 tsp raw sugar
1/2 tsp ground black pepper
1 tbsp oyster sauce
1/2 tsp garlic powder
1/2 tsp Herman Starter or honey


Toppings
some ground black pepper
some seaweed flakes


Directions

1. Mix all the marinating ingredients in a bowl.


Rinse the mid-wings and coat the marinade over the wings.

Cover with a sheet of cling wrap and let the wings marinate for about 1 to 2 hours.

2. Puncture a packet of Calbee prawn cracker with a sharp object. A small hole to release the air will do. Do this step when you are about to bake the wings.

Crush the prawn crackers in the packet with your hands or a rolling pin.

Pour out the crushed prawn crackers into a bowl.

3. Mix all purpose flour and rice flour in a deep bowl.

4. Preheat the oven toaster to 210°C.
Coat the marinated wings with flour mixture (Step 3).

Coat with a layer of beaten egg.

Roll the wing over the crushed prawn crackers.

Arrange the coated wings over a non-stick grilling plate, or baking tray lined with parchment paper, in a single layer.


5. Bake in a preheated oven toaster at 210°C for 25 to 30 minutes, or till you see the cracker coating starts to "bubble".


6. Sprinkle some ground black pepper and seaweed flakes over the crispy wings. This step is optional.

Spicy Crispy Cracker Coated Mid-Joint Wing (3 Dec 2017)

I used a spicy version of the prawn cracker and marinated the wings with cajun spice powder for a spicy version. As I was a little short of the prawn crackers, I added a small packet of crispy almond cracker to it ><


Baked in a pre-heated oven, at a higher rack, at 210°C for about 30 minutes.


Served with coconut rice and sweet & tangy sambal chilli. Yummy  :)
