IH Rice Cooker - Vanilla Butter Cake

A soft and moist vanilla butter cake baked in my new rice cooker using Induction Heating.


The cake took the shape of the inner pot of the rice cooker. Although it is not very appealing in its appearance, it has a nicely browned crust with nice caramelized aroma.
The crumb of the cake was moist, soft and a little spongy. My family love this light and fragrant cake 🍰 😋


Rice cooker: Philips IH Rice cooker HD3175, 1.5L, inner diameter of the pot is about 21cm at its opening.

Ingredient

Using 55g Omega 3&6 eggs
All ingredients in room temperature or

3 eggs, separated
1/8 tsp cream of tartar
100g fine sugar

100g top flour
1/2 tsp baking powder

50g unsalted butter
Pinch of salt
10g milk
10g condensed milk

1/2 tsp vanilla extract


Directions

1. Add butter, pinch of salt, milk and condensed milk into a heat resistant container.

Keep warm for about 5 to 10 minutes in a rice cooker, till the butter melts.


2. Add vanilla extract to the melted butter mixture. Set aside.

3. After the pot has cooled down slightly, coat it with butter.

4. Mix top flour with baking powder in a bowl. Set aside.

5. Beat egg whites in a dry and clean bowl till frothy. Add in the cream of tartar, then gradually add in the fine sugar. Beat at high speed then slowly reduce to low, until the meringue reaches firm peak.


Beat in the egg yolks, one at a time.


6. Sieve and mix in the flour mixture from Step 4. 

Pour in the melted butter mixture and mix well.

Use a spatula to mix and ensuring no melted butter sink below the batter.

7. Pour the batter into the prepared inner pot.

Bang lightly to level the batter, and to get rid of trapped bubbles.

8. Return the inner pot to the rice cooker.

Select "Cake" function from the menu and press "Start". The process will take 45 minutes to complete.

When the process ends, 4 "beeps" can be heard.


9. Transfer the pot to a steamer rack to cool down for about 5 to 10 minutes, or till the pot is not too hot to be handled.

Place a small piece of parchment paper over the cake.

Rest the given steamer rack over the cake.

Cover the pot with a plate or chopping board.

Finally, invert the whole set-up. Remove the inner pot, and let the cake cool down over the steamer rack.

10. After the cake has cooled down, cut and enjoy 😋

  1. Hi. I am using philips HD 3038 viva collection, and i tried this recipe yesterday,but my cake sank😕. My rice cooker only have 3 vent options, rice, congee and soup. Whicb one should i choose?
