The Nescafé premix coffee which I used in this recipe.
Soft and aromatic coffee flavoured buns topped with crispy almond flakes and fine sugar grains :)
Yield: 9 buns in a 20cm square pan

Raw dough weight: 419 g
Ingredients
50g hot water 热水
20g Nescafé Premix Coffee 3合1 咖啡
75g cold fresh milk

30g raw sugar 黄砂糖
1/4 tsp salt 盐, 2g
20g beaten egg 蛋液
20g cold unsalted butter 冷无盐奶油
20g beaten egg 蛋液

180g bread flour 高筋面粉
25g superfine wholegrain flour 低筋面粉
1/2 tsp cocoa powder 可可粉
3/4 tsp instant dry yeast 即发酵母粉
* superfine wholegrain flour can be replaced by all purpose flour.
Garnishing 表层装饰
Some beaten egg 蛋液
1 tbsp almond flakes
Some fine sugar
Directions:
2. Mix Nescafé premix coffee with 50g hot, stir to dissolve. Top up with 75g cold fresh milk. Keep in the fridge for 1/2 an hour.
2. Add in beaten egg.
3. Add in sugar, salt and cold butter.
4. Mix bread flour, superfine wholegrain flour, cocoa powder in a bowl. Pour the flour mixture to the bread pan.
5. Dig a hole and pour in the instant dry yeast.
6. Place the bread pan into the bread machine.
7. Select "8" Dough Kneading function; and press "Start".
8. When the program stops, let the dough continue to sit in the pan for another 15 minutes.
15 minutes later, the dough is ready.
10. Turn out the dough onto a floured surface. Flatten it with your palm to release the trapped air.
12. Roll up the small dough, pull down the sides several times to stretch out the dough surface, and seal at the bottom.
Wrap your palm around the dough and let it roll within your palm, to shape it.
13. Place the dough into the lined square pan. Spray some water and let the doughs proof for about 30 minutes in a warm oven.
14. Preheat the oven to 190 degree Celsius. Apply a few coats of egg glaze over the dough surface.
15. After closing the oven door, reduce the temperature to 170 degree Celsius, and bake at lower rack of the oven for about 17 to 20 minutes, or till the top turns light brown.
16. Transfer the hot bread to cool on a wire rack. Enjoy ^^
Hi, my family like your this bread recipe very much. if i want to just make it plain (no coffee powder)it is just ignore the coffee ingrediant part? and only use frsh milk 75g?

DeleteTo make a non-coffee bread, you can eliminate the coffee powder, the hot water and use 130 to 135g of fresh milk in total :)

ReplyDeleteAlso now a day if i saw people post bread recipe on my FB i fell that there's recipe is so complicated and so many typr of different dough name. but the result saw on photo is no diferent from your one, your recipe and step is much more more easier and convenient & the result was look better then them. heheheheheheh....
i has compared the flour brand of "Baking King & Blue Jacket" realized that " Blue Jacket" flour is more good. you may can try. (just a little suggestion & my own mind lah)S$4 per packet
