Turning 1/4 of the leftover yam/taro into sweet coconut yam paste, and added it to my braided bread. After slicing the loaf, there were steaks of yam paste embedded among the soft bread. This is a relatively heavy bread due to the presence of yam paste :)

Yam Paste
Ingredients
170g peel yam 去皮芋头
30g fine sugar 细糖
2~3 tsp trim coconut milk 低脂椰浆
Direction
1. Steam yam cubes in a rice cooker using "Ultraquick" rice cooking function with 100ml of water added to the pot.
2. While the yam is still hot, add sugar and mash it into a paste.
3. Add trim coconut milk to make the paste smoother, but not too wet.
4. Cover with a plastic food wrap and set aside.
Bread dough
Ingredients
150g whole milk 全脂牛奶
20g condensed milk 炼乳
25g beaten egg 打散鸡蛋
35g fine sugar 细糖
1/4 salt 盐

30g unsalted butter 无盐奶油
225g bread flour 高筋面粉
25g top/cake flour 低筋面粉
3/4 tsp instant dry yeast 速发干酵母
Direction
1. If you are using cold milk, keep warm the fresh milk, and condensed milk in a rice cooker for 10 minutes.
Or, you can let them stand in room temperature for about 25 minutes.
The temperature should not exceed 38 degree Celsius in order not to affect the yeast.
2. Pour milk mixture into the bread pan.
3. Add in beaten egg (about 1/2 an egg).
4. Add in sugar and salt.
5. Add in unsalted butter.
6. Pour in bread flour and cake flour.
7. Dig a hole and pour in the instant dry yeast.
8. Place the bread pan into the breadmaker.
9. When the dough is ready, lift the bread pan out of the bread machine.
10. Sprinkle some flour over the dough as well as the work tops.
Fvlatten the dough with your palm.
Wear a disposable glove to handle the slightly sticky dough.
11. Fold in the four sides of the dough into a square. Cover with a lid and allow it to rest for about 15 minutes.
12. Roll out the dough into about one cm thick rectangular flat dough.
13. Apply half of the yam paste onto the central of the dough.
Fold in one side to cover the yam paste.
Apply the remaining yam paste over the folded side.
Fold over the other side of the dough to cover the yam paste.
Roll with a rolling pin to flatten the dough slightly.
Use a pizza cutter to cut the dough into three strips, leaving about 3cm of one end uncut.
Let the cut sides facing-up and loosely plait them into a braided form.
Flip the dough over and seal the two loose ends together.
Flip over and tuck the sealed end below.
14. Place the braided dough into the slightly greased bread pan. Spray some water, and place a sheet of food wrap over. Allow the dough to proof for about 30 minutes.
15. Brush the top of the dough with some egg wash.
16. Select function "12" the baking program, select the crust colour, and press the "Start" buttom.
Cover the window with a small piece of aluminum foil to help the dough to achieve a more evenly brown top.
17. Transfer the loaf to a cooling rack and cut it when completely cools down

Hi, I am considering getting a bread maker. May I know if your bm can use any brand of bread flour. I was told some bread maker goes well with particular brand of bread flour only. TIA for sharing
ReplyDeleteHi Jerin, in fact the main reason is different type or origin of flour has different liquid absorbancy. For example the Prima brand bread flour can absorb more liquid than Origin brand bread flour. So to avoid over-adding liquid to a recipe, you can keep about 30ml of liquid to be added during kneading.

Hi can i check if I dont have coconut milk, can I replaced with condensed milk? 35g sugar included the sugar added into yam paste and dough ?
DeleteHi, if you don't have coconut milk, you can add milk. But if you choose condensed milk over coconut milk, you can omit the 30g sugar.

would you know a recommended oven temperature to bake this in if i cant do it in my breadmaker? somehow my breadmaker dont have a standalone bake function. it only goes through the full cycle of kneading and baking
