Breadmaker Multigrain Soya Pulp Loaf 面包机五谷豆渣吐司

Yield: One 12Lx11Wx12H cm loaf
Bread weight: 466g
Appliances: Whirlpool breadmaker BM1000

Every weekday morning I would be left with a small bowl of multigrain soya pulp after brewing the nutritious soya milk in the morning.
To reap the benefit of this nutritious leftover, I added part of the multigrain soya pulp to my sweet bread this morning. By adding Omega-3 rich golden flaxseed powder not only raised the nutritious value, but also lend a nice golden coat to the loaf.

Ingredients 材料
125g fresh milk 鲜奶
20g condensed milk 炼乳
30g unsalted butter 无盐奶油

25g beaten egg 蛋液
35g raw sugar 黄砂糖
1/4 tsp salt 盐
40g multigrain soya pulp 五谷豆渣

225g bread flour 高筋面粉
15g top/cake flour 低筋面粉
3/4 tsp instant dry yeast 即发干酵母粉

1 tbsp toasted flaxseed powder
            烤香亚麻籽粉

Directions
1. Pour fresh milk, condensed milk and butter into a heat resistant bowl.
Keep warm the ingredients in a rice cooker till the butter melted.
This step is optional. I prefer to work with warm ingredients ^^

2. Pour the warm milk mixture from (1) into the bread pan.

3. Pour the beaten egg into the bread pan.

4. Add in the raw sugar and salt.

5. Add in multigrain soya pulp.

 6. Pour in the bread flour and top/cake flour.

7. Dig a hole with your finger on the flour, and pour in the instant dry yeast.

8. Place the bread pan into the machine, close the lid and turn on the power.

9. Select option "5" Sweet bread, choose your preferred crust colour, and press "start".
I choose "Light" crust colour.

This step 10 is optional, you may leave the dough in the bread pan till baking cycle completes. By shaping the dough, you'll get a more uniform loaf and minimize the appearance of conspicuous  air sacs within the loaf.

10. When the countdown timer appears at 1:55 (1 hour after started the "Sweet Dough" program), take out the dough and shape it into a ball.
Sprinkle some toasted flaxseed powder over the surface of the dough.
Remove the kneading blade, and place the dough back to the bread pan
As the dough maybe sticky, it is advisable to handle it with a pair of disposable gloves

Lightly push down the dough to ensure the dough has good contact with the pan.

11. To avoid having an untanned top, cover the window with a small piece of aluminum foil.

12. Transfer the loaf to a cooling rack immediately after the baking cycle ends.

13. Slice the bread after it has completely cooled down. Enjoy :)

Made the stale bread into yummy French toast with whipping cream, fresh milk, eggs and golden syrup :P
