Natural Yeast Jasmine Green Tea Bread 天然酵母茉莉绿茶吐司


A slightly sweetened bread with faint jasmine green tea flavour and green colour crumb 🌿


Two main ingredients of this bread:
250ml mildly sweetened  jasmine green tea packet drink, and 7.5g-pack of green tea powder. If you prefer a more intense green colour, you can add two packets instead of one packet of green tea powder 🍃

Yield: one loaf of bread in a 20x10x10cm pan
Bread weight: 552g
Raw dough weight: 586g

Baking Temperature & Time:
Oven preheat to 180° C
Bake at 180°C for 15 minutes 
Reduce to 170°C for 40 minutes 
Turn off oven and bake for 5 minutes

Bread maker:
Mayer MMBM12


Ingredients A
145g cold jasmine green tea* 
40g raw sugar
3g salt
25g beaten egg @


Ingredient B
245g bread flour 
30g superfine wholegrain flour/all purpose flour
10g milk powder
1 pack Japanese green tea powder, 7.5g

Ingredient C
1/4 tsp instant dry yeast
50g natural yeast (100% hydration) *

Ingredient D
20g cold unsalted butter


Glazing
Some beaten egg


@ Keep the leftover beaten egg in the fridge to be used for glazing in the next day.

* 50g of natural yeast can be replaced by 25g each of bread flour and water, as well as 1/4 tsp instant dry yeast.


Directions
1.Mix all the Ingredient B together in a bowl.


2. Pour Ingredient A and B into the bread pan of a bread maker. Add Ingredient C on top.


3. Select "C-11 Dough" function and start the program. The program, which includes mixing, kneading and first proofing, will take about 1:30 hour to complete. However, as the dough would be going through overnight cold fermentation, the program would be terminated earlier manually.




4. When the countdown timer reads "1:20" dispense in the cold Ingredient D.


5. When the countdown timer reads "0:45" the kneading blade would make about 7 rotations to loosen the dough.  After the blade rotation stops, terminate the program manually by giving the "Stop" button a long hold.

Transfer the dough to a plastic bag coated with a little vegetable oil. Keep the dough in a second plastic bag, and place it in a covered mixing bowl.




Store the set up in the fridge for overnight cold fermentation. I let the dough proof in the fridge for about 16 hours.



6. Invert the dough with the first plastic bag, and let the dough thaw for about 45 to 60 minutes before shaping.


Remove the plastic bag and turn the dough out onto a floured work top. 
Press down the dough to release the trapped air. 

 Divide the dough into 3 equal portions.

8. Spray some water over the dough and place in a closed oven to proof for about 60 to 90 minutes, or till the dough almost reaching the brim of the mould.




9. Remove the dough from the oven and preheat the oven to 180°C.

10. Apply some beaten egg over the top face.

11. Bake the dough at lower rack of the oven set at 180°C for about 15 minutes. Lower the temperature to 170°C and continue to bake for 40 minutes.

To prevent over-browning the crust, place a sheet of aluminum foil over the top around 30 minutes into baking.
At the end of the 40 minutes (170°C), turn off the oven, and let the bread continue to bake for about 5 minutes.


12. Un-mould the bread immediately after leaving the oven, and let it cool down on a wire rack. 



13. Cut the bread after it has completely cool down.

Baking in a closed Pullman tin

1. When the raising dough reaching almost 1 cm below the edge of the pullman tin, slide the lid to close. 
Preheated oven to 210 degree Celsius for 10 minutes. Bake at 210 degree Celsius for 45 minutes, turn off the oven and bake for 5 minutes.


2. Remove the bread immediately from the pullman tin upon leaving the oven.

3. Let the bread cool down before cutting. Enjoy :)





I used the jasmine green tea bread to bake the honey cheese gratin toast :P

Green Tea Cheese Bun 绿茶乳酪甜面包



Nine small jasmine flavoured sweet green tea buns filled with Hokkaido cheddar cheese baked in a 20cm square pan. Added one packet (7.5g) of green tea powder to fortify dietary fibre in the bread.


These were the packet jasmine green tea drink, and green tea powder I used in baking the bread 🌱


Yield: 9 mini buns in one 20cm square pan
Bread weight: 508g
Raw dough weight: 460g
Appliances
Mayer MMBM12 breadmaker 面包机

Ingredients

110g cold jasmine green tea 冷茉莉绿茶
35g raw sugar 黄砂糖
20g beaten egg 蛋液
1/4 tsp salt 盐
185g unbleached bread flour 无漂白高筋面粉
20g  Superfine Wholegrain flour 超幼全麦/中筋面粉
8g milk powder 奶粉
7.5g green tea powder 绿茶粉
1/4 tsp instant dry yeast 即发酵母粉
50g natural yeast (100%hydration) 天然酵母∆

To be added at the 10th minute
30g cold unsalted butter 冷无盐奶油

Filling
60g Hokkaido grated cheddar cheese
10g condensed milk, optional

Toppings
Some bread flour for sprinkling 面粉做表面装饰

∆ 50g natural yeast can be replaced by 25g each of bread flour and water, together with 1/4 tsp instant dry yeast.


Directions:

1. Line a 20cm square pan with parchment paper. Set aside.


2. Pour all the bread dough ingredients, except the butter, into the bread pan following the sequence listed. Transfer the bread pan to the bread maker.
I prefer to mix the flours, milk powder and green tea powder together before adding to the bread pan.



Select "C-11" Ferment Dough function; and press "Start". The mixing, kneading and first fermentation will take 1 hour 30 minutes. As the dough would be performing​ overnight cold fermentation, the program would be terminated manually.


3. When the countdown timer reads "1:20", add in the cold unsalted butter.


4. When the countdown timer reads "0:45", the kneading blade will rotate about 7 revolutions. Give the "Stop" button a long press to terminate the program manually.

Remove the dough from the bread pan, and transfer to a plastic bag lightly coated with oil. Tie a loose knot at the end.

Wrap with a second plastic bag, and keep in a mixing bowl covered with a lid. Squeeze out most of the air from both bags.

Keep in the fridge for overnight cold fermentation.


5. In the next day, take out the dough from the fridge 1 hour prior to shaping.  Remove the second outer plastic bag, invert the dough, and let it thaw for about 1 hour.


6. Turn out the dough onto a floured surface. Flatten it with your palm to release the trapped air.
 Divide the dough into 9 portions, about 53g each.


7. Roll up the individual dough and shape into ball by pulling down the side of the dough, and seal at the bottom.

Cover and rest for about 15 minutes.


8. Take a dough and roll out flat using a rolling pin.

Flip over and place about 6g of grated cheese in the centre.

Wrap up the dough and pinch to seal.

Cup your hand and let the dough roll within to shape.


9. Place into the lined baking pan.

Spray some water and let the dough proof in a closed oven for about 40 to 50 minutes, or when the dough almost double in size.



10. Remove the baking pan from the oven. Start to preheat the oven to 180° Celsius.


11.Sprinkle some bread flour on the surface of the dough.

Cut out some patterns with a sharp razor. This step is optional.



12. When the dough is in the oven, reduce the temperature from 180°Celsius to 160°Celsius, at the lowest rack, for about 10 minutes.

After 10 minutes, reduce the oven temperature to 150° Celsius, and bake for about 12 to 15 minutes, or till the top slightly brown.
   

End of baking.


13. Remove the bread from the oven, and allow to cool on a wire rack for 5 minutes.


 14. Lift the bread out of the baking pan after about 5 minutes, and onto a cooling rack .
