Happycall Mixed Vegetable Stew






Serving: 4 adults

Ingredients:


2 slices ginger 
3 cloves garlic
1 tbsp salted soya bean paste

5 big leaves of cabbage
20 slices carrot
5 shiitake mushrooms, halve or quarter
Some bean curd skin
2 black fungus
1 bunch glass noodle

You can get the dry ingredients in a bag from supermarket.


Sauce ingredients:

2 tbsp oyster sauce
A few drops of sesame oil 
150g water
1 tsp sugar

Mix all the sauce ingredients together. Set aside.


Directions:

1. Clean and soak all the dry ingredients. Set aside.

2. Rinse once and soak the preserved salted soya beans for about 1/2 hour.
If you prefer saltier taste, just rinse the preserved salted soya beans will do.

3. Peel and cut carrot into about 0.5 cm thick. Set aside.

4. Rinse and cut cabbage into bite sizes. Set aside.

5. Add about 1 tbsp olive oil into a hot pan. Then place ginger, garlic and salted bean paste to sautée.

6. Stir in the cabbage, cover the lid and wait for it to soften.

7. Add in the remaining ingredients, except the glass noodle, and pour in the sauce ingredients. The sauce should be able to cover about 80% of the vegetables. Cover the lid, and let them cook till your desired softness.


8. Towards the end of the cooking, add in the glass noodle to absorb all the excess liquid. Simmer till the glass noodle is cooked.

9. Garnish with Chinese coriander and serve hot with warm rice :)

Happycall Stir-Fried Egg Okra



Ingredients:
2 eggs
140g okra, cut into short length

Seasonings:
Salt
Light soya sauce
Sesame oil

Directions:

1. Wash and drain the okras. Cut into 2 cm length. Set aside.


2. Beat 2 eggs with 1/8 tsp salt. Set aside.


3. Heat up about 1/2 tbsp of oil in a HCP set at medium high heat.

4. Pour in the egg mixture and let it cook till golden before flipping over to cook the other face.
5. Cut the omelette into small pieces, scoop out and set aside.

6. Add in another tsp of olive oil.



7. Pour in the okra and stir fry quickly under medium high heat.
Slowly add in 1/2 bowl of water in a few intervals.
8. When the okra has softened and cooked, pour in about 1/2 tsp of light soya sauce, salt and a few drops of sesame oil.

9. Finally, add in the omellete and stir to mix.


Scoop out and serve with warm rice :)

Sambal okra 叁巴羊角豆



Ingredients:

200g okra (lady fingers)
1/2 onion, chopped
1 tsp sambal blachan chilli paste, adjustable
1/2 chunk gula Melaka or sugar, adjustable
1 tsp fish sauce

Directions:

1. Boil a pot of water enough to cover the okra. When the water starting to boil, add a tsp of salt and some oil to the water.

2. When the water starts to boil again, add in the okra and blanch for about 2 to 3 minutes or to your desired softness. When cooked, remove the okra from the water and place in a plate to cool.

3. Trim away both ends of the okra. Cut into halves if the okra is long. Set aside.

4. Heat up a non-stick pot, pour in the chopped onion and dry-fry till fragrant.


5. Add in a tsp of oil, sambal blachan chili paste, gula Melaka. When the ingredients form a liquid mixture, add in the fish sauce and continue to cook for about 1 to 2 minutes.

6. Pour the chilli gravy over the cooked okra. Sprinkle some shrimp floss over if desire :)

Steamed broccoli 蒸西兰花


Ingredients:

1 stem broccoli
1/2 tsp oyster sauce
1/8 tsp light soya sauce
1/8 tsp salt
1/2 tsp sugar
100ml water
1 tsp potato starch

Direction:
1. Wash the broccoli and cut into floret.

2. Soak in salt water for 5 minutes before steaming.

3. Drain the broccoli florets and steam in high heat for about 5 minutes if you like them crunchy, or 8 minutes if you prefer softer. Remove from steamer and set aside.
If you prefer more flavour, you can prepare a light gravy to pour over the cooked broccoli.

4. Heat a teaspoon of oil in a preheated pot. Pour in a mixture oyster sauce, light soya sauce, salt, sugar, water and potato starch. Stop heating once the sauce thickens.

5. Pour the gravy over the broccoli and serve warm with rice :)
