Red Sugar Coconut Filling

Yield: 140g sweetened grated coconut filling

20g red sugar
30g raw sugar
30g water
Pinch of salt
1 pandan leaf (screwpine)
100g grated coconut
1/2 tsp glutinous rice flour
1 tbsp water

1. Add red sugar, raw sugar, water, salt and pandan leaf into a pot to melt the sugar.

2. When the sugar has melted, add in the grated coconut and mix well. Stir-fry till most of the water has evaporated.

3. Mix glutinous rice flour with 1 tbsp water. Add the glutinous rice water mixture to the coconut and mix well.

4. Transfer to a clean container and keep in the fridge till needed :)
