Created 4 bottles of agar agar jellies with pastel colour coconut jellies in them. Just to have fun making some fancy jellies for my family. I don't usually use food dye in my food, so the colour was not ideal 😅 Just eat, don't look 😆
Yield: 4 x 200ml pudding bottles of low sugar, low fat, soft agar agar jelly
Heart & Star Coconut Jelly
Ingredients
4g agar agar strips (25g after soaking)
300g water
1 blade pandan leaf
35g fine sugar
1/8 tps salt
100g trim coconut milk
some red and green food dyes
Directions
1. Rinse and soak agar agar strips for about 20 minutes. I got about 25g of soaked agar agar after 20 minute.
2. Bring soaked agar agar strips, pandan leaf and water into a boil at medium-low heat. Add sugar and salt to the agar agar water. Ready when all the agar agar strips and sugar has dissolved.
3. Add 100g of trim coconut milk to the agar agar water and bring to a light boil.
4. Split the coconut-agar agar water into 3 portions. Mix two portions with red and green food dyes in two separate bowls.
Divide the remaining coconut-agar agar water among 4 pudding bottles. Set aside to cool down and solidify.
5. Use a heart shape cutter to cut out 4 hearts from the pink coconut jelly bowl. And use a star cutter to cut out 8 stars from the green coconut jelly bowl. Place one pink heart and 2 green stars coconut jellies into each pudding bottles. Set aside.
Colourless Agar Agar Jelly
Ingredients2g agar agar strips (soaked weight 14g)
300g water
1 blade pandan leaf
40g fine sugar
Directions
1. Rinse and soak agar agar strips for about 20 minutes. I got 14g of soaked agar agar strips after 20 minutes.
2. Bring soaked agar agar stips, pandan leaf and water into a boil at medium-low heat.
3. Add sugar to the agar agar water. Ready when all the agar agar strips and sugar has dissolved. Discard the pandan leaf.
4. Pour the colourless agar agar water into the 4 pudding bottles filled with coconut jellies.
Let the agar agar cool down before refrigeration.
