Golden Pumpkin Mochi 南瓜花生麻糍

Mochi with added pumpkin purée coated with sugar peanut powder. A nice light snack in auspicious gold for the lunar new year :)

Yield: 4 snack size portions

Dough ingredients
100g glutinuos rice flour
1 tsp tapioca flour
10g fine sugar
60g cooked pumpkin purée
125g water

Peanut powder coating
1 cup finely ground peanut powder
1 tsp toasted white sesame seeds
1/2 cup fine sugar

*1 cup = 200ml

Direction
1. Mix all the dough ingredients in a bowl into a smooth batter.

2. Cover with a lid and let the batter rest for 30 minutes.

3. While waiting, mix peanut powder, sugar and white sesame seeds together in a deep bowl. Set aside.

4. Heat up about 1 tbsp of oil in a non-stick pan at medium low heat.

5. When the oil is hot, pour in the batter and heat up till the batter solidify.
Do not stir the batter while heating.

6. Fold in the dough, and press to form into a big lump.

7. When the dough has turned translucent, it is ready.

8. Cut a portion of the dough and put into the peanut powder mixture.
Cut the dough into bite size and roll to coats with peanut powder.
You may want to coat the scissor blades with oil to prevent the sticky mochi from sticking to them.

9. Serve and enjoy :)

  1. Dear Ngai Leng,

I couldn't find your email so am commenting here to share with you about the #SgEatWithUs movement and invite you to be a part of our upcoming carnival.

#SgEatWithUs is a grounds-up initiative that invites Singaporeans and their friends to share home-cooked dishes with the community. We see home-cooked food is a key ingredient to bring Singaporeans and Singapore residents together by extending the family bond with the different communities to build a stronger and united Singapore and to achieve the #SgEatWithUs vision of ‘Our Family, Our Community, Our Singapore’.

As part of SG50 celebrations, a series of pop-up carnivals is organised to celebrate the spirit of #SgEatWithUs. Our second carnival "The Good Old Days" will be held on 29 March 2015, at the National Library Building Plaza. We would like to invite you to join us at our upcoming carnival as a #SgHomeChef by cooking/baking a dish that reminds you of "The Good Old Days". It may be a dish that reminds you of your childhood, or perhaps something that you learnt to cook/bake from your parents or grandparents.

More details and sign up information can be found at http://www.tinyurl.com/sghomechef-c2. You can also visit our facebook page at http://www.facebook.com/sgeatwithus.

In addition, we would also like to invite you to share with us your recipes (blog links are welcome) on local food via our facebook page. Simply post it to our page's wall and we will share it with our facebook community.

We look forward to your participation and support in our community movement!

    Regards,
    Theresa
