A delicious looking and tasty baked chicken dish to go with ginger-garlic flavoured rice, and Korean spicy cucumber salad. The soft and juicy wings are coated with sticky sweet and mildly spicy sauce. Slightly tangy too. Yum yum 😋
Servings: 16 mid-wings for 4 persons
Ingredients
600g frozen mid joints, thaw
Marinades
1 tbsp rice wine
2 tsp raw sugar
1 tbsp rice wine
2 tsp raw sugar
1 tbsp Hoisin sauce
1 tsp Korean chilli paste
1 tbsp oyster sauce
1 tsp honey
1 tsp sesame oil
1 tbsp cut spring onion
2 tsp chopped garlic
1 tsp chopped ginger
1/8 tsp pepper powder
1 tsp Korean chilli paste
1 tbsp oyster sauce
1 tsp honey
1 tsp sesame oil
1 tbsp cut spring onion
2 tsp chopped garlic
1 tsp chopped ginger
1/8 tsp pepper powder
1/4 tsp salt
Basting sauce
1 tbsp leftover marinades2 tbsp golden syrup/honey
1 tsp lime juice
Garnishing
1 tsp roasted sesame seeds
1 tsp cut spring onion
1 tsp roasted sesame seeds
1 tsp cut spring onion
Directions
1. Rinse and pat dry the chicken wings. Marinade with sugar and rice wine for about 15 minutes.
2. Marinate with the rest of the marinades. Cover with cling wrap and marinate for at least 1 hour.
3. Arrange the chicken wings in a single layer on a baking tray lined with parchment paper.
If the baking tray cannot accommodate all the wings in a single layer, bake in separate batches.
4. Bake in a oven toaster set at 200 degree Celsius for 15 minutes.
5. While the wings are baking, collect the marinade and mix with about 1 tbsp honey. This will be used as the basting sauce later.
6. After the first round of baking ends, apply basting sauce over the wings.
Return to the oven toaster to bake at same temperature for about 10 minutes. Repeat this step till use up the basting sauce.
I repeat this step for about 3 times.
7. At the final round, add about 1 tbsp of honey with juice from one lime, and apply to the wings.
Reduce the toaster temperature to about 150 degree Celsius and bake for about 10 minutes.
After the heating is over, keep the wings in the toaster, and allow the remnant heat to further cook the wings, and melts the fat under the skin.
8. Shake some roasted sesame seeds and green scallions, over the wings before serving them warm. Enjoy :)
