Serving: a small dish to go with rice
Ingredients
1 green zucchini, about 200g
1/4 tsp salt
1 egg
1 tsp milk
Dash of seasoning powder
1 tsp chopped garlic
1/2 tsp chopped ginger
1/2 tsp chopped red chili
1/4 tsp light soya sauce
30g water
Dash of salt & sugar
Dash of seasoning powder
1/2 tsp starch powder, mixed with
3 tbsp water
Chinese coriander for garnishing
Direction
1. Wash the zucchini with vegetable wash as we will be consuming the fiber rich skin.
2. Cut the zucchini into thin slices. Sprinkle 1/4 tsp of salt over them and mix well.
Rinse and drain the zucchini slices with water after 15 minutes.
This is to drain out excess fluid to make the zucchini crunchier.
3. Beat the egg with milk and seasoning powder. Set aside.
4. Heat up about 1 tsp of olive oil in a non-stick pan in medium high heat. Pour the beaten egg in when the oil is hot. Stir the egg into fragments after about 5 seconds. Allow the egg to rest in the hot pan for about 1 minute to brown it.
Flip the omelette over to brown the other face. Sweep the omelette pieces to the edge of the pan.
5. Pour 2 tsp of olive oil into the pan. When the oil is hot, add ginger, garlic and chilli to it. Stir-fry till fragrant, add in the zucchini slices.
6. When the zucchini slices have softened slightly, add 1/4 tsp of light soya sauce in, and wait until it bubbles. Pour in the water. When the water starts to boil, add in salt, sugar and seasoning powder.
8. Garnish with coriander and serve hot with rice :)
I really love stir fry foods, because they're very tasty and healthy. And I would like to cook another one right now. I think this recipe is the best choice for me. I will definitely make this. Thanks for sharing!
